Wrap a baking sheet with a layer of foil, this will help you out with clean up.
Sprinkle a small amount of brown sugar onto the entire baking sheet. Next, place a single layer of bacon over the entire baking sheet and add more brown sugar on top of the layer.
Smoke at 350F, flipping once, for 30 - 40 minutes. The goal is to get the bacon as crispy as possible without burning it.
Immediately after removing the bacon from the smoker, take each slice of bacon and lay it out on a wire rack to dry. Try not to let the bacon slices touch each other as they cool, they will stick together.
Cool the bacon for 15 - 20 minutes then enjoy. Will stay good in a zipper bag in the refrigerator for about 10 days.
