My first and MAIN point of this article is to express to you how good candied bacon is! Honestly, if you haven’t had it before, try this recipe ASAP or look around for another recipe that suits you. I remember my first time having candied bacon. Maybe more clearly than I should to be honest, it truly was an eye opening experience. Although what I tried was likely a more elegant recipe than what I’m offering. Regardless, this recipe serves as a good starter/intro to bacon candy. After you graduate this course, move on to experiment with some of the following flavors, or any of your choice.
- Brown sugar
- Maple syrup
- Molasses
- Salt
- Cayenne
- Chili powder
- Cumin
- Other spices
One of the best parts about candied bacon is it’s ability to jump ‘food gaps’. For example, candy bacon would make an excellent appetizer at a cocktail party or cookout. Or, it could be the bacon on a BLT in the main course of a meal. Just as easily, you can serve candy bacon as a dessert to a meal by itself or alongside other snacks. It really serves all purposes in this sense which is why I say that it is able to jump the ‘food gaps’.
My favorite way to enjoy bacon candy is as an occasional snack. Keep it in a plastic bag in the fridge for up to 10 days. Whenever you’re up to it, just reach into the bag and grab a piece. It’s not common that you will reach the 10 day mark.
If you’re ‘over’ normal candied bacon, try some of my modifications. You can always make your own modifications and I am sharing these modifications as inspiration for you to do the same. What you’ll do is mix in the recipe modifications with the brown sugar before proceeding with the recipe below. This is going to help you get some more complex/advanced flavors that you might not get just from bacon and brown sugar.
Modification 1 – Spicy Candy Bacon:
- 1/2 tbsp Cayenne pepper
- 1/2 tsp Black pepper
- 1/2 tsp Kosher salt
Modification 2 – Zingy Bacon Candy:
- 1/2 tbsp Granulated sugar
- 1/2 tsp Cinnamon
- 1/2 tsp Lemon zest

Sprinkle a small amount of brown sugar onto the entire baking sheet. Next, place a single layer of bacon over the entire baking sheet and add more brown sugar on top of the layer. Smoke at 350F, flipping once, for 30 - 40 minutes. The goal is to get the bacon as crispy as possible without burning it. Immediately after removing the bacon from the smoker, take each slice of bacon and lay it out on a wire rack to dry. Try not to let the bacon slices touch each other as they cool, they will stick together. Cool the bacon for 15 - 20 minutes then enjoy.
